Sum Tam Salad

Sum Tam, or Papaya Salad, is a classic Thai dish. It goes beautifully with sticky rice and a dish of fried meat like Nuea Yang. It is important to note that this dish uses unripe papaya (green papaya).

 Serves 2


½ papaya, peeled

4 cowpea pods, cut to 6 cm pieces

8 cherry tomatoes, halved

3 medium garlic cloves

20 gr roasted peanuts, lightly crushed

4 tbsp Nam Pla (Fish sauce)

4 tbsp lemon juice

6 tsp sugar

Chili pepper to taste

    Cut the green papaya lengthwise and peel thin stripes with a vegetable peeler.

    Crush garlic and chili in a mortar and pestle to a paste.

    Add fish sauce, sugar and lemon juice and continue to crush together for another minute.

    Add the cowpeas and crush a little more.
  • 5
    Add the papaya stripes and crush together for 2 minutes (crushing the papaya allows it to soak in the tastes).

    Add the cherry tomatoes and crush together 2 more minutes.

    Add sugar and fish sauce. Crush and stir together until well blended.

    Add peanuts, stir and serve.
